Instructions
Preparation Steps
Preheat your oven to 350°F (175°C) and grease a cake pan.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the eggs, buttermilk, vegetable oil, and lemon zest until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the poppy seeds.
Transfer the batter into the prepared pan and smooth the top.
Bake for about 45 minutes, or until a toothpick inserted comes out clean.
Once baked, let the cake cool before mixing powdered sugar with lemon juice to create a glaze.
Drizzle the glaze over the cooled cake and let it set before slicing.
Notes
This cake pairs wonderfully with fresh berries on the side. For extra flavor, consider adding a dash of vanilla extract.
