Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic, cumin, and paprika; cook for another minute.
Pour in the vegetable broth and add the diced tomatoes and chickpeas.
Bring to a simmer and let cook for 20 minutes.
Add spinach and stir until wilted, about 3 minutes.
Season with salt and black pepper to taste.
