Preparation Steps
In a bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
Add flour and salt to the frothy mixture. Knead until smooth, about 5 minutes.
Cover the dough and let it rise in a warm spot for about 1 hour.
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Divide the dough into 12 pieces. Roll each into a long rope and shape it into a pretzel.
Prepare the baking soda bath: bring 4 cups of water to a boil and stir in baking soda.
Boil each pretzel for 30 seconds, then remove and place on the prepared sheet.
Brush the pretzels with melted butter once cooled slightly.
Combine cinnamon and sugar, then sprinkle generously over the pretzels before baking.
Bake for 10-12 minutes until golden brown. Let cool before serving.
