Instructions
Preparation Steps
Boil 1.5 cups of water in a pot and add the couscous. Stir, cover, and remove from heat.
Let couscous sit for 5 minutes to absorb the water, then fluff with a fork.
In a large bowl, combine cherry tomatoes, cucumber, red onion, and parsley.
Add the fluffed couscous, olive oil, lemon juice, salt, and pepper to the bowl. Mix well.
Gently fold in feta cheese before serving. Adjust seasoning if needed.
Notes
Serve chilled or at room temperature. Add nuts for extra crunch!
