Instructions
Preparation Steps
In a mixing bowl, combine mashed pumpkin, mascarpone, sugar, vanilla, and pumpkin pie spice until smooth.
In another bowl, whip the heavy cream until soft peaks form and gently fold into the pumpkin mixture.
Quickly dip ladyfingers in a bit of milk or coffee and lay them in a serving dish.
Spread a layer of the pumpkin mixture over the ladyfingers, then repeat with another layer of cookies and mixture.
Cover and chill in the refrigerator for at least 4 hours or overnight for best results.
