Instructions
Preparation Steps
In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
Stir in black beans, shredded cheese, and chili powder. Mix thoroughly and remove from heat.
Lay an egg roll wrapper on a flat surface and place about 3 tablespoons of the meat mixture in the center.
Wrap the egg roll by folding the sides over the filling, then roll it up tightly. Seal the edge with water.
Heat oil in a deep frying pan over medium-high heat. Fry the rolls in batches until golden brown, about 3-4 minutes per side.
Drain on paper towels. Serve hot with sour cream on the side.
Notes
For extra kick, add chopped jalapeños to the filling. They’re perfect as an appetizer or game-day snack.
