Instructions
Preparation Steps
In a large skillet over medium heat, cook the bacon until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
Add chopped onion to the skillet and sauté until translucent, about 5 minutes.
Stir in the brown sugar, bourbon, and apple cider vinegar. Bring to a simmer.
Return the bacon to the skillet, and simmer until the mixture thickens, about 45 minutes.
Stir in black pepper and remove from heat. Let cool before storing in jars.
Notes
This jam can be stored in the refrigerator for up to 2 weeks.
