Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add chopped red onion and sauté until translucent.
Add minced garlic and cook for an additional minute until fragrant.
Stir in the shredded chicken, buffalo sauce, diced tomatoes, black beans, corn, cumin, and chili powder.
Bring the mixture to a simmer and cook for 30 minutes, stirring occasionally.
Serve hot, garnished with your favorite toppings.
