Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat.
Add diced bell pepper and sauté until soft, about 5 minutes.
Stir in the cumin, garlic powder, salt, and pepper. Cook for another minute.
Add black beans, corn, and diced tomatoes; mix well.
Reduce heat and let simmer for 15 minutes, stirring occasionally.
Serve warm, garnished with fresh cilantro if desired.
Notes
This dish pairs nicely with avocado slices or a side of rice. For extra flavor, add lime juice before serving.
