Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat.
Sauté diced onions for 4-5 minutes until translucent.
Add diced potatoes, salt, black pepper, cumin, and paprika; stir to mix well.
Cook for another 10 minutes until potatoes are slightly tender.
Stir in black beans and cook for an additional 5 minutes.
Transfer the mixture to a baking dish and top with cheddar cheese.
Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
Notes
Serve with a dollop of sour cream and fresh cilantro for extra flavor.
