Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
Add carrots and cook until slightly tender, about 5 minutes.
Stir in the lentils, vegetable broth, cumin, thyme, paprika, salt, and pepper.
Bring to a boil, then reduce heat and let simmer for 25 minutes until lentils are soft.
Serve warm, garnished with fresh herbs if desired.
Notes
For added flavor, consider squeezing a bit of lemon juice before serving.
