Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat.
Add ground turkey and cook until browned, about 7–10 minutes.
Stir in taco seasoning, black beans, and diced tomatoes. Simmer for 5 minutes.
While turkey cooks, steam riced cauliflower until tender, about 5 minutes.
Assemble bowls by layering cauliflower rice, turkey mixture, cheese, lettuce, and sour cream.
Notes
For added flavor, squeeze lime juice over the bowls before serving.
