Preparation Steps
Preheat the oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
Add chicken pieces, cook until brown and fully cooked, about 15-20 minutes.
Mix in chicken broth, salt, and pepper, then simmer for another 5 minutes.
In a mixing bowl, blend cooked chicken with sour cream and half of the cheese.
Spread the chicken mixture in a greased casserole dish.
Layer the prepared mashed potatoes on top, smoothing it out evenly.
Sprinkle remaining cheese over the top and bake for 25-30 minutes until bubbly.
Allow to cool briefly, then serve warm.
Notes
Try adding some fresh herbs like parsley for extra flavor. Leftovers can be great for lunch!
