Instructions
Preparation Steps
Cook the rice noodles according to package instructions, then drain and set aside.
In a large skillet, heat vegetable oil over medium heat. Add minced garlic and ginger, sauté until fragrant.
Stir in the mixed vegetables and cook for about 5-7 minutes, until they start to soften.
Pour in the coconut milk, fish sauce, and lime juice. Stir to combine.
Add cooked noodles to the skillet, tossing everything together until heated through. Serve hot.
Notes
For a garnish, add some chopped cilantro and lime wedges just before serving.
