Preparation Steps
Preheat your oven to 375°F (190°C).
Cut zucchinis in half lengthwise and scoop out some flesh to create boats.
Cook quinoa according to package instructions; fluff and set aside.
In a large bowl, mix cooked quinoa with olive oil, chopped olives, cherry tomatoes, and feta.
Add garlic powder and dried oregano; combine well.
Stuff the zucchini boats with the filling mixture.
Arrange stuffed zucchinis on a baking sheet and roast for 25-30 minutes.
