Preparation Steps
In a large skillet, cook the beef sausage over medium heat until browned, breaking it up as it cooks.
Add the chopped onions and bell peppers to the skillet, cooking until softened, about 5–7 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the diced tomatoes, Cajun seasoning, and chicken broth. Bring to a boil.
Reduce heat and stir in the uncooked rice. Cover and simmer for 20 minutes or until rice is cooked.
Fluff the rice with a fork before serving. Adjust seasoning to taste.
Notes
For an extra kick, serve with hot sauce. Perfect with a side of cornbread!
